Cut from the center of U.S.-raised pork tenderloin, they are trimmed by butchers, well marbled and described as extra lean, with little excess fat and a buttery flavor.
The tenderloins are individually flash frozen, vacuum sealed and shipped in a cooler with dry ice. Defrost thoroughly in the refrigerator before roasting, or defrost in the microwave. For roasting, cook in a 350° oven for 30 minutes and serve sliced on an angle at ¼″. To broil or grill, preheat the heat source, place the pork 5-6 inches away and cook for 10 minutes until lightly browned.
Turn and cook for 10 minutes more.
