Today Gourmet Chilean sea bass comes as 8-8oz. Portions. The wild-caught fillets are hand-cut, individually packaged, vacuum sealed and flash frozen within hours of harvest. They are Marine Stewardship Council certified and have a flaky, moist texture. Sea bass is low in fat and supplies protein, vitamins and minerals. Flash freezing limits ice crystal formation to help retain the fish's structure, moisture, texture, taste and nutrients after thawing. To bake, season and brush with butter or a substitute, then cook at 350F degrees for approximately 20 minutes, until the fish flakes. To broil, place the fish 3 to 4 inches from the heat and cook for 10 to 12 minutes. To steam, add liquid, spices and herbs, cover, bring to a boil and steam over medium heat for about 12-14 minutes. The American Heart Association recommends at least two servings of fish per week.
