PCB creation Shop All Die Cutting Sheets sku-294331177
No rating yet(0 ratings)PCB creation Chocolate Transfer Sheet, Dahlia Roses, comes in 17 sheets. Listed under Shop All Die Cutting as sku-294331177, this Unisex product is a thin, transparent 16" x 10" plastic sheet with red and pink flowers, narrow clear spaces and fine white bloom outlines that may be hard to see against white. Made in France for professional use only, it may contain traces of soy.
Store it in a dark, dry room at 60 to 64 deg. F or 15 to 18 deg. C. To use it, lay the sheet colored side up. Melt a pound of chocolate in a medium metal bowl over simmering water without letting the bowl touch the water. Pour a thick ribbon onto the sheet and spread it evenly to the edges with an offset spatula.
While the chocolate sets, shape the sheet into curls or ribbons, wrap it around a cake or pastry, or cut the chocolate into shapes with a knife or cookie cutter; sharp metal cutters work best. Press straight down to make squares, rectangles or triangles. If the chocolate sticks or drags, let it set longer. Once set at room temperature or in the fridge, peel the chocolate from the sheet.
The pieces can decorate cupcakes, pastries, ice cream or cake. For free-form designs, pipe melted chocolate onto the colored side using a paper cone or pastry bag with a small round tube. The chocolate should have no small solid bits that could clog the tube and should not be so hot that it flows uncontrollably; avoid lines too thin to lift intact.
For coated ganache, cut a transfer-sheet square slightly larger than each piece. While the coating is wet, place a square colored side down on each piece and press gently for full contact. Refrigerate for 20 minutes, then peel off the sheet when the chocolate is firm.
