Its extended handle provides leverage when pressing potatoes, and its V-shaped body helps reduce waste. The large bowl holds a whole large potato without slicing it first. The ricer limits starch release for smooth mashed potatoes; add butter, cream, salt or other spices as desired.
Pressing boiled potatoes through it also incorporates air for a light, fluffy texture without lumps. For cauliflower rice, cut off the stem, chop the crown into pieces that fit the bowl, then press the handles together.
