Shun VG0021 Silver Santoku 7-inch Knife sku-278377627

The Shun VG0021 Silver 7-inch santoku is listed under Kitchen Knives Knife Block Sets and Cutlery as sku-278377627. Its dual-core, high-carbon, high-chromium stainless steel blade has 71 alternating micro-layers of VG10 and VG2 that extend to the edge. The layers are welded and fold-forged to create a fine grain and a herringbone pattern along the cutting edge.

Etched laminations reduce drag and help food release from the blade. The light, thin blade is hand-sharpened to a 16° double bevel on each side and has a Rockwell hardness of 60-61. It has a traditional Japanese octagonal ebony PakkaWood handle and comes with a wooden saya sheath. Handcrafted in Seki, Japan, it carries a limited lifetime warranty.
