Globally, sorghum serves as a staple food grain for people, while in the United States it is grown mainly as a feed grain for livestock. Its feeding value is comparable to corn: on a per-pound basis grain sorghum ranges from 90% to nearly equal to corn, offering more protein and fat but less vitamin A. Livestock usually find the grain highly palatable and intake rarely limits performance, although some bird-resistant varieties and hybrids contain tannins and phenolic compounds that reduce palatability. For cattle feeding, the seed should be cracked or rolled to increase the digestible portion. After harvest, pasturing cattle or sheep on sorghum stubble is common practice—both the roughage and dropped heads are utilized—but stubble with secondary regrowth must be grazed cautiously because of the risk of prussic acid (HCN) poisoning. Grain sorghum can also be harvested as whole-plant silage. Sweet sorghum, developed specifically for silage, yields more forage but typically lower feed quality since it lacks grain. Some producers blend grain sorghum with soybeans to produce silage with higher protein content.
