The fully forged knives use rust-resistant X50CrMoV15 German stainless steel. A liquid-nitrogen treatment is intended to improve rust resistance and edge retention.
The blades have a 26-degree total cutting edge designed for thin slices and resistance to chipping. Each knife has a fade-resistant, triple-riveted POM handle, a full tang and an angled end bolster. All-Clad says its forged knives received the highest cutting-performance grade against the top 8 brands, based on 2022 independent panelist data backed by third-party testing.
